"CHUCK STEAK" Chuck is a cheap cut with big flavour and good texture (provided its cooked properly). Chuck comes from the neck and shoulder area of the cow, these muscles get a lot of exercise, which means they can be tough, fatty and gristly without proper cooking. Chuck is best when its cooked slowly in a stew, casserole, pasta sauce etc etc. By slow cooking we break down the muscle fibres and connective tissue and drastically increases the tenderness of the meat.
